Ingredients

For the Beef and Broccoli

  • 1 pound flank steak, thinly sliced against the grain
  • 2 tablespoons olive oil or vegetable oil, divided
  • 5 to 6 cups fresh broccoli florets
  • 1 teaspoon sesame seeds (optional garnish)
  • 2 sliced green onions, (optional garnish)
For the Stir Fry Sauce

  • 1 teaspoon fresh ginger, grated
  • 3 garlic cloves, minced or grated
  • 1/2 cup warm water
  • 1/3 cup low-sodium soy sauce
  • 2 tablespoons brown sugar
  • 11/2 tablespoons cornstarch
  • 1/4 teaspoon black pepper
  • 1 tablespoon sesame oil
For Serving (Optional)

  • Steamed white rice
  • Brown rice
  • Rice noodles or ramen noodles
  • Cauliflower rice

Method

  1. Prepare the Beef: Slice the flank steak thinly against the grain. For easier slicing, place the beef in the freezer for 20 to 30 minutes first.
Make the Sauce: In a bowl, whisk together soy sauce, warm water, brown sugar, ginger, garlic, cornstarch, black pepper, and sesame oil until smooth.
Cook the Broccoli: Heat 1 tablespoon oil in a large skillet over medium heat.
Add broccoli and cook for 4 to 5 minutes until bright green and crisp-tender. Remove from the skillet and set aside.
Cook the Beef: Increase heat to high and add the remaining oil.
Cook beef in a single layer for 1 to 2 minutes per side until lightly browned and just cooked through.
Add the Sauce: Lower heat to medium and stir the sauce again.
Pour into the skillet and cook for 2 to 3 minutes until thickened and glossy.
Combine Everything: Return broccoli to the skillet and toss until evenly coated.
Cook for 1 to 2 minutes more, then garnish with sesame seeds and green onions if desired.
Serve warm over rice or noodles.

Notes

  • Slice beef thinly for the most tender texture.
  • Fresh broccoli works best for texture and flavor.
  • Stir the sauce before adding it to the skillet because cornstarch settles.
  • Add mushrooms, carrots, snap peas, or bell peppers for extra vegetables.
  • For a gluten-free option, use tamari instead of soy sauce.
