Ingredients
  

For the Beef Stroganoff

  • 1 pound top sirloin steak, thinly sliced against the grain
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, finely chopped
  • 8 ounces brown mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon all-purpose flour
  • 1 cup beef broth
  • 3/4 cup heavy cream
  • 1./3 cup sour cream
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper
For Serving

  • 8 to 12 ounces egg noodles
  • Fresh parsley or green onions, chopped for garnish

Method
 

  1. Cook the noodles: Bring salted water to a boil and cook egg noodles according to package instructions. Drain and set aside.
    Prepare the beef: Slice the beef thinly against the grain. Season lightly with salt and pepper.
    Sear the beef: Heat olive oil in a large skillet over medium-high heat. Add beef in a single layer and cook for about 1 minute per side until browned. Avoid overcrowding the pan. Remove and set aside.
    Cook the vegetables: Melt butter in the same skillet. Add onions and mushrooms and cook for 6 to 8 minutes until softened and lightly browned. Stir in garlic and cook for another minute.
    Build the sauce: Sprinkle flour over the vegetables and stir for 1 minute. Slowly add beef broth, scraping the pan to release flavorful bits. Stir in heavy cream and simmer for 2 to 3 minutes.
    Add creamy ingredients: In a small bowl, mix a spoonful of warm sauce with sour cream. Slowly stir sour cream into the skillet. Add Worcestershire sauce and Dijon mustard.
    Finish the stroganoff: Return beef and juices to the skillet. Simmer gently for 1 to 2 minutes until warmed through.
    Serve: Spoon over warm egg noodles and garnish with parsley or green onions.
