Brown the beef: Heat a large skillet over medium-high heat. Add the ground beef and cook for 4 to 5 minutes, breaking it apart until browned.
Cook the onion and garlic: Add diced onion and cook until softened, about 4 to 5 minutes. Stir in minced garlic and cook for 30 seconds.
Add seasonings: Stir in chili powder, cumin, garlic powder, oregano, salt, and pepper. Cook for about 30 seconds while stirring.
Transfer to slow cooker: Move the beef mixture into a 6-quart slow cooker.
Add remaining ingredients: Stir in black beans, kidney beans, diced tomatoes, diced tomatoes with green chilies, and tomato sauce.

HIGH: 3 to 4 hours
Taste and adjust: Add extra seasoning if needed. For spicy chili, stir in cayenne or hot sauce.
