Ingredients
  

  • 2 pounds lean ground beef (85/15)
  • 2 large yellow onion, diced
  • 4 garlic garlic cloves, minced
  • 2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • teaspoons salt, or to taste
  • ½ teaspoon black pepper
  • 1 15-ounce) can black beans, drained and rinsed
  • 1 (15-ounce) can kidney beans, drained and rinsed
  • 1 (30-ounce) can diced tomatoes with juice
  • 1 (10-ounce) can diced tomatoes with green chilies
  • 1 (15-ounce) can tomato sauce
Optional Toppings

  • Shredded cheddar cheese
  • Sour cream
  • Chopped green onions
  • Fresh cilantro
  • Jalapeño slices
  • Diced avocado
  • Crushed tortilla chips

Method
 

Brown the beef: Heat a large skillet over medium-high heat. Add the ground beef and cook for 4 to 5 minutes, breaking it apart until browned.

Cook the onion and garlic: Add diced onion and cook until softened, about 4 to 5 minutes. Stir in minced garlic and cook for 30 seconds.

Add seasonings: Stir in chili powder, cumin, garlic powder, oregano, salt, and pepper. Cook for about 30 seconds while stirring.

Transfer to slow cooker: Move the beef mixture into a 6-quart slow cooker.

Add remaining ingredients: Stir in black beans, kidney beans, diced tomatoes, diced tomatoes with green chilies, and tomato sauce.

Slow cook:

Cover and cook:

LOW: 6 to 8 hours

HIGH: 3 to 4 hours

Taste and adjust: Add extra seasoning if needed. For spicy chili, stir in cayenne or hot sauce.

Serve warm: Add your favorite toppings and enjoy.

    • For deeper flavor, cook on low whenever possible.
    • Chili naturally thickens as it cools. Add broth or water if needed when reheating.
    • Make it spicier with cayenne pepper or jalapeños.
